Mortadella & Fresh Burrata
Blistered Biga crust topped with silky Italian mortadella, a whole fresh burrata sphere, and roasted crushed pistachios.
Artisanal wood-fired pizza crafted with slow-fermented Biga dough, Italian cheeses, and unhurried culinary dedication in the heart of Jeonpo, Busan.
At Rough & Dough, we prepare our dough daily using the traditional Italian Biga pre-fermentation method. By allowing the dough ample time to rest and mature, high-heat fire transforms each crust into a blistered, fragrant shell that remains remarkably light, airy, and chewy within.
From Italian imported flour and whole cheeses hand-grated every single morning, to house-emulsified dressings made with free-range eggs and olive oil, we attend to every invisible step with constant care.
Patiently matured daily for deep depth of flavor, crisp wood-fired charring, and effortless digestion.
Selected Italian flour and fine cheeses, hand-grated fresh each morning before service begins.
Salad dressings and savory sauces prepared from scratch with free-range eggs and extra virgin olive oil.
A portion of our monthly proceeds is proudly donated to Greenpeace and Animal Rights Korea (KARA).
